I am so loving the weather right now! It’s almost hard to sit and write this blog post. But I do want to give you an update and share some information with you.
This May, I will be traveling to New Jersey to teach at the American College of Integrative Medicine and Dentistry. I always enjoy teaching, but this is special group of people who I can really identify with. For those who don’t know, I started my professional career working as a dental assistant. This was in the late 80’s and early 90’s. Let me tell you, dentistry has come a long way! However, I would never call it a healthy field to work in. For some dentists they have spent years working with replacing amalgam fillings, being exposed to chemicals they use in their field and hearing EVERY day - “Don’t take this personally, but I hate dentists!”

Beautiful Spring view from this past weekend. I was in Atlanta at the National TACA (The Autism Community in Action) conference. The hot topics were eliminating EMF's and using CBD to support Autism and other health issues.
As most of you know, I am an Autism Mom and when my son was born in 1993 very few healthcare practitioners were talking about Autism. It was as if there was a black hole of information and support. Even getting a diagnosis took years.
A fellow practitioner and conference buddy asked me if I had to give just 5 supporting tips for those working with Autism as a parent, teacher or practitioner, what would I suggest? Great question because over the years we tried many diets, modalities, supplements, testing, physical therapies, schools/educational practices, etc. Some just didn't help much, others were needle movers and we saw great improvement.

Spring Keto Celebration
It’s Springtime and that means everything is in bloom. I’ve been busy in the kitchen cooking up a delicious Spring keto dessert. It takes a little time, but not too much and the results are great. I used the Simple Mills Vanilla cake mix and put it in my silicone donut molds and baked for 15-18 min at 350 F in the oven. Let cool then remove from mold and place on parchment paper to fill and assemble.
Lemon Curd:
3-4 lemons = 1/2/ cup of lemon juice
Zest from one lemon
1/3 C. Lakanto Powdered Monkfruit Sweetener
4 egg yolks
1/3 C. Unsalted butter cut into cubes
In a glass bowl mix the egg yolks, Lakanto, lemon zest and lemon juice. Whisk together. Place over a pan of simmering water and whisk for 8-10 min (until the curd has thickened. Take off heat and whisk in cubes of butter until smooth. Let cool.
Meringue:
4 egg whites
1/4 tsp. Cream of Tartart
1/3 C. Lakanto Powdered Monkfruit Sweetener

This is the first week of August and here in Eugene, Oregon we are expected to hit triple digits on the thermometer!
